Why the food stuffs cannot be fried with water instead of oil?

One can't fry food stuffs like vegetables for example, with water because the boiling point of water is less than that of the oil. Usually all food stuffs will have water content. In fact, we fry food stuffs to remove this water for which they should be heated beyond the boiling point of water (100°C). If water is used to fry, the water from the food stuff cannot be removed instead the water used to fry gets vapourised.
As oil can be heated up to 150°C or more than that which is far above the boiling point of water (100°C), the food stuff cannot be charred out. Even at this temperature of 150°C, the oil is not vapourised, the heat from the oil helps in frying the food stuff. Further the oil adds to the smoothness and taste of the fried food stuff.
