Why the food stuffs cannot be fried with water instead of oil?

As oil can be heated up to 150°C or more than that which is far above the boiling point of water (100°C), the food stuff cannot be charred out. Even at this temperature of 150°C, the oil is not vapourised, the heat from the oil helps in frying the food stuff. Further the oil adds to the smoothness and taste of the fried food stuff.
